I pray all is well with you and yours. I am not losing my mind (yet), but a few weeks ago I had some ricotta I didn’t want to spoil and a craving for pancakes. I searched and searched and all I found was “fancy” recipes with lemon and other additives.
I just wanted some plain, fluffy, flavorful pancakes. So, what is a girl to do?
This girl pulled out her trusty box of Bisquick and adjusted the pancake recipe to include ricotta, vanilla and cinnamon. Yummy!
Here is the recipe in case you ever want to make some for yourself!
Ricotta Pancakes
2 cups Bisquick
2 teaspoons nutmeg – freshly grated if possible!
2 teaspoons cinnamon
1 1/3 cup milk (room temp)
2 eggs (room temp)
1 tablespoon vanilla extract
1/2 cup whole milk ricotta
Whisk dry ingredients together.
Whisk wet ingredients and add to dry.
Mix well by hand.
On a heated griddle or heavy fry pan, add a bit of butter. Wait until you get a sizzle from a few drops of water.
Make those pancakes!
These pancakes were so light and fluffy, I actually saved a few for the freezer.
